I have the same problem with my iphone 12. I followed the instructions on my macbook pro (with Monterey, so no itunes but via the Finder app) but it says that my ios is up to date.
I'm located in Italy, so i thought that the iOS wasn't out here just yet... but as of today (15th of september) i saw many many youtube italian users reviewing it (so no beta developer version).
So why am i not able to update?
