Updating 1TB iPhone to a <1TB Mac:
You don't, if you would not have lots of free space after doing so. However, backing up to a 512GB Mac might do just fine. As for another option, back it up to an external hard drive: Back up your Mac with Time Machine - Apple Support

Backing Up 1TB iPhone to a <1TB Mac:
Re-reading your post, I see you want to back up the entire iPhone to the Mac. Note that the entire iPhone is not backed up, though you could back up files from it, and choose where to store them (on the external hard drive), through use of Finder. In the long run, I'd say back up to iCloud, being it is much safer to do so. Getting an iCloud+ Plan is a must for this: iCloud+ Plans and Pricing - Apple Support
