If I buy an iphone 13 can I transfer all my information myself or should someone in a apple store help me do it?

I do not live in the USA, but will be going this month and I will be buying an iphone 13 6.1”. I checked and it says that I can pick it up at the store, so I prefer they help me with all the transfer of my data. My question also is, will it work then in my country, since I have a carrier here, but do not want they block my phone.
