My Apple watch series 3 won’t update the new 8.7.1 update

Every time I try to update my Apple Watch series 3 to the new 8.7.1 update it says I’m not connected to the internet even though both my watch and phone are. I have the IPhone 11 Pro. I’ve tried unconnecting and reconnecting to the WiFi on both devices, turned both on and off again. I’m at a loss of what else to do… is my watch now too old meaning it just won’t update anymore rendering it useless?
