Why can't I get rid of hundreds of fonts I don't use in Big Sur

My font list in any of the Adobe products is idiotic.

I really, really don't want to see hundreds of fonts that I will not be using.

Please tell me there's some way of deleting them or at least actually turning them off, this is insane isn't it?
