Even since upgrading my iPhone 12 to iOS 15.6.1, I am not able to Air Drop from my phone to any other Apple Device, and I'm also having intermittent issues with my phone being able to connect to my AirPods and Apple Car Play. Is anyone else experiencing these issues?

I'm having the same issue. After 15.6.1 bluetooth audio connections are initially fine but degrade to jittery/lossy and then result in a loss of pairing, even at short distances. I tried forgetting and re-pairing my devices, killing all apps, restarting the phone, and going through the Network Reset procedure, none seemed to fix. I did not have this problem in 15.6 or earlier versions.
