Clicking on a calculator app and seeing all icons usually means the calculator app has crashed at launch. That usually means either a hardware error, or maybe an iOS software problem, or a storage corruption.

Robust and unique passwords, enabling two-factor authentication, reviewing security recommendations (settings > passwords) and related steps, all of which have likely been suggested. And none of which are seemingly related to what appears to be an app crash.
And if you really believe the device is compromised, factory reset it. Which is an appropriate part of trying to resolve an app crash.
For issues with Jack, that appears to be a legal matter, and best addressed through police and attorneys. Not forum postings.
If this is not a managed iPhone device, delete the associated profile.
If this is a managed device, contact the IT group managing the device.
If you are seeking to delete specific root certificates in the trusted store, there is no means to do that.
Apps on my phone have been hacked on and off since April 13 until currently 11/22/2022. Upon clicking on my calculator last night, it displayed all of my icons from my desktop which leads me to believe access was gained to some of my private information. How can I feel if all the trust certificates are legit and how can I tell if anything else is tampered with or has been? Jack has been messing with my life since last August 2021.
