Transfer to a new carrier

If I transfer my phone number to a new carrier will everything stay on my Iphone like it is now?

Yes, it will.

But before proceeding, make sure that that iPhone is not locked to your previous carrier. Should be this case, ask that carrier to unlock it, if you're eligible.
