Why can’t we place cursor anywhere we want to edit texts?

Does anyone else hate some of these “short cuts” Apple’s decided to add to 12? I want to at least have the option of turning off the “long press space bar to release cursor” short cut and replace with old fashioned “put the darned cursor wherever I put my finger (on the screen 🤭)” Does anyone know if this is possible?
