How do I track my swimming activity on my Apple Watch?

I’m going to the beach with an Apple Watch. And I’m gonna swim with it in the sea waters. How do I track my swimming activity on my Apple Watch?

Apple Watch SE does not track swim intervals? I just bought an Apple Watch SE specifically to track my swims. Previously I've used various models of Garmin, which do that job well. This time I decided to try the Apple Watch. However, I think I made the wrong decision. It appears that the watch will not track my intervals. So, for example, if my workout calls for me to do 10 100-yard intervals on 1:30, there's no way for the watch to track that. Is that correct?
