Is there a way to keep all my browsing history in Safari on macOS Monterey and never delete them or allow Safari to delete them? Would it work if I go to where the browsing history for Safari is kept and manually copy and past them to another folder separate from Safari's folders?

In Safari's Preferences you are able to set Safari to delete the browser's history after different time periods up to one year. Keep in mind that keeping this history uses up the computer's RAM which can contribute to slowness. I wouldn't do it.
In Safari Preferences in the General tab, in the "Remove history items:" field, I set it to "Manually". That implies that browsing history is never deleted by Safari. Is that true? I'm using the latest macOS Monterey. Is this new to macOS or Safari? To allow browsing history in Safari to remain indefinitely?
I do not know if the Manual deletion does what you want. That would be a question to ask Apple Support.
