search and replace format commands in Pages

I am working in a large Pages document and need to search out and replace certain formatting commands like paragraph markers, tabs etc. This was always a very easy procedure in MSWord and it is also possible in Nisus Pro (a sort of Word look-alike) but I have been unable to find this ability in Pages.

So my question is how does one achieve this and, if it is not possible, I am wondering how the heck Apple can consider Pages a mainstream word processing or publishing app?
