My iMac runs Mojave but with a Catalina partition. Is it normal to have two separate file systems as the screenshots show?

If you only use Catalina then yes, keep your apps there.
Question, why did you create a second partition, why didn't you just upgrade the Mojave partition? If you are no longer using Mojave you may want to consider getting rid of that partition.
