Can I Backup my iphone 6Splus my deceased mothers same model and both of our iCloud accounts to Google drive, etc…?

How can I transfer iPhone data using a Mac? My wife needs to transfer all data from her old iPhone to a new one. I have a fast Mac and I thought using local backup and restore to do this (with the Finder) , as it must be faster than all other methods.
