I purchased my AirPods Pro at a Target store in November of 2020. However, a tech at my local Apple store said my AirPods were manufactured in December of 2020. How is it possible to have a manufactured date after they have been purchased from a 3rd part retailer?

Valid question.. and I don't think that's possible.
It is more likely than that either the tech mis-read/mis-keyed in your serial number and pulled up a different one or completely misread the manufacturer date.
Otherwise someone went to the future and brought yours back. =}
