I am running W10 Pro (latest update) and iTunes 12.12.4.1
I have 2 iPod classics 80Gb & 160Gb, 1 of them is permenantly in my car.
When I connect the iPods to the PC, they open as an external drive, but iTunes does not see
either of them as a device, so I cannot sync my latest purchases.
Has Apple stopped iTunes from supporting iPod classics?

Have you installed iTunes from the Microsoft Store? You may find compatibility with iPod classic is better when you use the old school installer you get from this link: https://www.apple.com/itunes/download/win64. If a feature doesn't work as expected it may sometimes help to revert to previous build. To the best of my knowledge, no. iTunes should still be able to sync content to iPod classic. You may have a local issue. You might try iOS device not showing in iTunes for Windows - Apple Community. Despite the title the same steps can help with a classic.

I can only suggest a full tear down and reinstall of iTunes as set out in Troubleshooting issues with iTunes for Windows updates - Apple Community. Perhaps go back another version. Run the installer as administrator.

I followed the steps, but got this message.
" Windows found drivers for your device but encountered an error while attamting to install
Apples iPod USB Driver.
This devices cannot start. (Code 10)
Any advice would be welcome.
Unfortunately this doesn't help.
When the iPod is connected, Windows opens it as an external drive and device manager sees the "Apple Mobile Device USB Driver" and "Apple iPod USB Device" iTunes still doesn't see the iPod. It has to be an issue with iTunes.
The issue is definitely with iTunes 12.12.4. I followed the steps & installed 12.10.11.2 and everything worked perfectly.
I then updated iTunes to the latest version and iTunes did not see the devices. I uninstalled again and reinstalled 12.10.11.2
and again everything is now working as it should.
I installed from Apple and have just reinstalled and it is just the same.
I will try an older version of iTunes. Have Apple stopped supportin iPod classics on iTunes?
