Is there a way to retrieve messages from one sender that I deleted by mistake but is backed up in the cloud?

If you have a device backup that contains the message(s), and you do not use messages in iCloud, you can factory reset and erase your device. After erased, set it up using your backup. You'll lose anything new since the backup was made but you may recover your messages.
