Restore
I thought I was backing up my iPad to my PC but it restored an old back up ONTO my iPad. Can I "go back"?

While the is no “undo” feature, should you still have a backup of your iPad that was taken prior overwriting your iPad - the backup can be restored to the iPad.
Given your description, I fear you have over-writen data on your iPad for which you don’t have a backup…
