Apple mail: How to set "send from" email for a specific contact. different email for different contacts.

I have different emails for different purposes. I want certain recipients to get emails from one email address, and others from a different one. Auto doesn't work, it might plug in the last used and use the wrong sender email. Setting ONE email doesn't work, then I forget to change it for certain people. can't I specify in contacts which email I send from???
