Why is it that I can cancel a subscription, but I don’t have a choice to delete the subscription after I canceled it?

It is not possible to delete a subscription that you have canceled or expired.
This will disappear from your purchases after about a year.
But you can hide the subscription history, see -> Hide purchases from the App Store
