You can't add an AppleCare plan for your iPad from your iPhone. If you can't complete the purchase from your iPad directly, call Apple directly (if in the US) at 800-MY-APPLE and ask for AppleCare Plan Administration. They will require a credit card payment from you, but they can issue the plan directly. If you not in the US, you'll need to find the number for Apple in your country.
