Separate purchases?

My adult son is on my Family Sharing account- which we would like to keep...however, is it possible to have his credit card alone uploaded for his purchases?

No, but you can ask him to load up his own store credit so that any purchases he makes don't fall to your card. See How apps, content, and subscriptions from Apple are billed - Apple Support.
