Hi I would like to know if an iPad Pro (non cellular) purchased in the US will be covered by the apple limited warranty in the EU. I live in Cyprus and there is only a authorized reseller.

No. The warranty is officially restricted to the country of purchase. From Apple's legal document (Legal - iOS Warranty Document - Apple):
Apple may restrict warranty service for iPhone, iPad, Apple TV and HomePod to the country where Apple or its Authorized Distributors originally sold the device.
