How do I get rid of these awful unicorn emojis?
Tap on the three dots under the third column of unicorns. That will bring you to all of the Memoji. Select something that is not a unicorn from the row of small icons above the larger memoji. It won't get rid of things entirely but it won't be unicorns.

ignore them. Stop using them. Flood the Frequently used with other emojis you do not take issue with...

Hello ~ They cannot be removed and following the information provided by *leroydouglas* is your best option.

Open settings and then go trough General > Keyboards and at the very bottom you can disable "Memoji Stickers"
restart the phone if necessary to clear
