how to update software when the Automatic update option is not available on general settings, and you cant even reboot your iPhone in any settings..

Try again, without the VPN.

First-few-hops VPNs are problematic, with too many of them compromising security and privacy for little or no gain over existing HTTPS/TLS/SSL with Private Relay.

Failing that, connect to and use a computer to perform the update of your iPhone 7, as is described on one of the sections included here:
