pages language

How do I change (from American English to British English) for a document in Pages? Format/Text/More doesn't have "Language" anymore, on my machine.

Mac mini, macOS 12.4

If it's spellcheck you are after, just go to Edit > Spelling and Grammar > Show Spelling and Grammar and change the dictionary to British English.
