I am sending in my iphone for repair to Apple. When you delete all the info one has on their phone is it really gone? The rep assisting me said they put the phone through some machine to wipe the memory clean. So, does mean that not all was deleted when I did it?

It is probably just memory. Your data should be OK. However, in any case, it is critical to have everything backed up. Also see:

No it will be completely deleted as if brand-new
