Apple Watch away from iPhone

Will the basic Apple Watch track my steps away from my iPhone (meaning i don't have my phone with me on walks) and then transfer/synch with my iPhone later?

Apple watch isn’t tracking steps and activity I recently got a new phone and unpaired it from my old phone but ever since I paired it with my new one it doesn’t track my steps or activity anymore. can anyone help?

How to pull runs off of watch without phone I got a new iPhone and sold my old phone before pairing my watch to my new phone. I have 3 weeks of activities on my watch that I want to download. Is this possible using Wifi? Or do I really need to erase/reset my watch, then pair it with my new iphone, and then start tracking activities again. I REALLY don't want to lose my recent activities. Thanks!

The watch should still count your steps while away from your phone, but if you have a GPS only model it wont be uploaded to Apple Health until you are connected to your phone again
