It is so slow on my machine. Having to wait minutes for a simple file 1.2 MB file. Any recommendations to remove it or at very least reset it to be somewhere performant?

fileproviderd is a daemon that facilitates streaming file services. Apple is forcing Dropbox, Google Drive, and OneDrive to use it rather than the reliable systems they had used before Monterrey.
I don't have those problems with iCloud.

Not sure I understand. If Dropbox, Google Drive, and OneDrive are "forced" to use it, wouldn't they stop working if it was disabled or removed?
And FWIW, I just uploaded a 1.5MB file to Dropbox and it took some small fraction of a second.
What, exactly, is fileprovider?
Sounds to me like the developers are just dragging their feet in fulfilling their responsibility to make their apps work with macOS.
