I have a subscription to iTunes Match which will expire in August. I recently subscribed to Apple One, including Apple Music. If I cancel iTunes Match now, or allow it to expire, will I continue to have uninterrupted access to all my iTunes library on all my devices?

You don’t need to cancel iTunes Match now but turn off auto renewal and allow subscription to expire. Transition will be seamless as both use iCloud music library.

Cancelling now shouldn't effect your music library as it now stands.
