I've started seeing 'HomePod 02 - LivingRoom' appear in my speaker options when on a call but I don't even own a Home Pod, there must be a way to disable it? I just want to switch to speaker by tapping the option once instead of having to choose a device.

I can only see the option when trying to switch to speaker whilst on a call, it doesn't come up as a device when playing music.
It also appears wherever I am
If you want to eliminate tapping for any audio source, you can set a default audio option
> Accessibility > Touch > Call Audio Routing, then choose an audio destination.Route and automatically answer calls on iPhone - Apple Support
Perhaps a neighbour has a HomePod set to allow connections from Everyone under the Allow Speaker & TV Access for HomePod setting. You could try playing music and see if you can work out where the speaker is located. See Use AirPlay to stream audio - Apple Support.

Thanks, for anyone else who finds this in future restarting the phone makes the option go away

I still think the openly available AirPlay speaker is the most likely explanation for how it got there, but odd that it got stuck when you changed locations.
