Apple Watch Activity Goal not changing

Trying to change my activity goals and I cannot change anything. I go to activities, scroll down, but I don’t have any option to change it. I’m currently sitting on the lowest settings for everything and would like to increase it so I can actually feel like I’m reaching a goal.

This is the only goal you can change on a watchos6 watch 1 or 2;

To get this you need watchos7 or higher;
