Can I use an International eSIM on my iPhone12 mini instead of Carrier on unlocked phone?

Yes, if the the carrier you want to use supports eSIM. But it would be more flexible if you switched to eSIM for your regular carrier, then use a physical SIM while traveling, so you can change carriers easily.


And also note that if your travel plans are not long term check with your carrier for roaming plans. Both Verizon and AT&T have very attractive international roaming plans that allow you to keep your number and might be less expensive than switching to prepaid SIMs. For example, AT&T has a plan that costs $10 on any day you actually use cellular voice or data but extends your current voice, data and text plan terms to wherever you are. And it has a $100 maximum per month. And if you have a Wi-Fi connection and Wi-Fi calling that doesn’t count as using your plan.
