I own a IPAD AIR Model MD787LL/A with IOS 12.5.5. how do I update to an IOS 14.0 or later? My IPAD says that 12.5.5 is the latest version. Having an older IOS version is preventing me from using many applications (Like Disney plus)

You can't. An unit running 12.5.5 isn't capable of 13 or above.
Try downloading the applications to a newer one on the same Apple ID first.
