If I disable and delete the messages that are stored on my iCloud account, what (if anything) do I need to do to make sure my old messages are not also deleted from my phone's storage?

If you have Messages turned on in Settings, your name, iCloud then just turn that off. If you delete from iCloud you will delete them everywhere if Messages is still turned on.
