Cannot get any mobile data connection on my iPhone 12 using roaming.

If you are attempting to roam, it may be there is not a carrier that allows that where you are located. I'm guessing that you are outside of your home area since you are attempting to roam. You should check with the cellular carriers in that area to see if they allow roaming on their networks.
