I want to change from my iMac 21.5" (Late 2015) to a new iMac with the Apple M1 chip. I don't want to transfer all my current files, just certain ones. How do I select certain files and photos for the transfer ? Can I use a Thumb drive to copy for my current iMac and reload in the new machine ?I assume this might be laborious.

If you have iCloud enabled on your old iMac and keep documents, photos etc synced you should be able to easily access them from your new iMac provided you set it up with the same Apple ID.
Other files can be transferred by any removable USB device.

If the USB stick is "too laborious", it might be easier to transfer everything with Time machine, and delete what you don't want.
I don't want to sync all of my documents. I want to avoid transferring certain old ones to my new iMac. Would it be better to delete them first on the old iMAC ? I'm not sure how to sync just certain files without moving everything over.
You cannot sync "certain files", please re-read my first post. Those are the options that will work.
