Sorting audio books properly

I have a lot of legacy audio books. Apple Music on my laptop puts them in with music. I don't want shuffle playing to play books with music. I'd like them marked as audio books so I only play them if I want to

You should be able to move them to the Books app, which has a dedicated audiobook section.
