I have an iPhone 13 pro and my service carrier is consumer cellular. I was looking to buy a Apple Watch series 7 but before I do. I need to know if my watch will be compatible with my phone? Any idea?
The iPhone is fine, but you cannot use a Cellular Apple Watch with Consumer Cellular, as Consumer Cellular does not support the Apple Watch.

You can use a GPS only Apple Watch and do everything the cellular model can do as long as your iPhone is nearby.
