My iPhone 12 is frozen; I cannot open any apps, I cannot turn it off, or do a hard reset (holding both the volume button and the off button).
I've tried to connect it to my laptop to do an update or factory reset my phone and it wont trust the device.

That is not how you do a “hard reset”. See below:
Try and Force Restart your iPhone EXACTLY as shown below and see whether that resolves the issue:
