I just ordered a new Macbook Pro. Prior to receiving it, I think I should delete all old - no longer used software and files before using migration functi0on to set up the new computer. Is this a sound practice??? Need advice.

If it makes you fee better sure—
Personally I have never removed old softeware etc... I let the macOS sort it out. And if they are obsolete or won't launch it will be clear, and I delete them after the move...,
The most trouble free way to move to a new machine, is using the Setup Assistant on the initial boot of a brand new machine— you have one shot here. https://support.apple.com/en-us/HT205749
