I just bought a iPone 12, with IOS of 15.02. Of course now I need earbuds. What are my options?

There are tons of options out there. There are AirPods and Beats earphones made by Apple. Plus there is Bose and others. You can do a Google search for headphones of your choice and then make a decision. You can also go directly to the Apple website here ➡️ Www. Apple.com (Headphones).

If you have any Bluetooth headphones you could connect them. If you need EarPods you could purchase them from Apple or you could purchase a Lightning to 3.5mm adapter to use with any 3.5mm auxiliary headphones or cables.
