If you are using an IMAP mailbox, deletion of email from one device will result in deletion of email from all devices.

Where can I access the option to select the IMAP mail box. I am using 15.1 version software.

IMAP is a mail protocol - likely supported by your Mail provider - who can provide the setup details for your email account.
When setting-up the mail account on your Apple devices using the Add Account wizard, your iPad and iPhone will usually automatically set-up using IMAP.
