Can I choose which data to move to a new macbook pro?
When migrating from one MacBook Air to a new MacBook Pro, can I pick and choose which data to transfer while using the migration tool?

No you can not. As noted, it is all of them or none of them. The alternative is to manually copy what you want to transfer.
