the mail app open in every start
Every time I start or restart, the mail app opens automatically. I unchecked from the options to open during the entry, but it opens again

We understand that you have an app opening when you start up your Mac, and we'd like to help. Begin by removing anything you do not want to open when logging in from Login Items:
Remove login items to resolve startup problems on your Mac
Once that is done, restart your Mac, being sure to uncheck the option to "Reopen windows when logging back in".
