after passcode is entered, and watch is unlocked, the watch will lock again in a few seconds if there is no activity. Can the time be increased to say 30 seconds before watch locks itself again to no activity?

If you have wrist detection turned on and are wearing it, it should not lock again until you take it off, provided you do not have tattoos that interfere with the sensors.
