is apple care transferable to a new phone if I trade it in before the 2 year period is over?

No. Apple Care for iPhones is tied to the device. You can cancel it, and purchase a new Apple Care plan for the new device.

As explained in the link I provided above, you will get a prorated refund for the remainder of the Apple Care+ plan when you cancel it:

If you cancel your AppleCare plan more than 30 days after your purchase, you’ll get a refund based on the percentage of unexpired AppleCare plan coverage, minus the value of any service already provided.1
