Use the TV App and Music App:

iTunes is no part of macOS 11. The TV app is for playing TV Shows and Movies, whereas the Music app is for playing Music.

Apple split iTunes up in Catalina. Choose Applications from the Finder's Go menu and use the new programs instead.
