Hi - my iPhone 12 Pro Bluetooth settings shows that it's connected to S776a87554da3ec6fC. There is no "i" to look at details and therefore no way to disconnect this.
Does anyone know what this connection might be or if I can (or should) disconnect it?
Will this unpair my Apple Watch? I’m concerned this might be a long process if it does. What would be connecting via Bluetooth without a name and without an option to « forget » the connection anyway? I turned Bluetooth off and back on and it doesn’t show up … until I go to another app and come back to the Bluetooth screen and there it is again!?

Yes, certainly. It will remove all Bluetooth (and Wi-Fi) connections and memory of having had these connections.
That device is something hanging around that uses Bluetooth.

It depends on which concerns you more - a long process (actually not that long) or a possibly illegitimate device (extremely unlikely).
If you’re concerned about it, you can do:
Settings > General > Transfer or Reset iPhone > Reset > Reset Network Settings.
