when you backup a iPhone on a Mac, do the pictures upload on the Mac ?

If you use iCloud for Photos then the answer is NO and only placeholders are included in the backup to the Mac. If you do not use iCloud for Photos then the photos are also backed up to the Mac during the creation of the backup file.
